Trim the cutlets of excess fat as, crumbed and cooking quickly, it just won’t have time to render.

Place the flour, eggs and breadcrumbs into 3 separate high sided plates. Beat the eggs.

One at a time, dip the lamb cutlets into the flour first, holding the bone, making sure all the meat is coated. Next, dip it in the egg, coating it fully, then into the breadcrumbs, pressing them on with your hands.

Heat the oil in a large frying pan over medium high heat for 2-3 minutes, then place the lamb cutlets in. Cook for 3 minutes each side until golden and cooked to your liking.

Transfer to a plate lined with paper towel for a minute, then serve immediately. Served here with salad and minted mayo.
