Sauté the beef mince and onions over a high heat with a little salt and pepper. A large non-stick fry pan is best and requires no added oil. The more surface area, the less ‘stewing’ you will get. When the meat and onions are really brown and smell like burgers, turn off the heat.
  • 500 g Beef Mince
  • 1 Brown Onion
    finely chopped
  • 1 pinch Salt And Pepper

Add the tomato sauce, soy and pickles and combine well. Refrigerate. Preheat the oven to 180C (160C fan-forced). Mix a little cornflour and water to make a paste.
  • 3 tbs Tomato Sauce
    plus extra for dipping
  • 2 tbs Light Soy Sauce

  • 0.75 cup Dill Pickle
    finely chopped
  • 1 Cornflour
  • 1 splash Water

Place one sheet of pastry on a clean bench or board, positioned like a diamond. Imagine two intersecting lines running north-south and east-west. Place 1 slice of cheese just below the centre, add a spoon of mince and a squeeze of mustard.

Take the bottom corner and fold toward the centre. Roll the pastry towards the top corner keeping the pastry taut. When you are 3/4 of the way along, fold both sides toward the centre. Brush the top triangle of pastry with your paste and roll to the end. Repeat. Make sure the sides are tucked in firmly to avoid the filling busting out the sides.

Brush the rolls with a little oil and arrange on a baking tray, seam-down. Bake for 12-15 minutes until spring rolls are golden brown and crispy. Serve with your choice of condiments (we went with Big Mac sauce!)
