Preheat oven to 200°C/180°C fan-forced. Place the oats and coconut on a large tray. Mix to combine. Bake for 5-7 minutes or until golden, stirring halfway through cooking. Remove from the oven and cool.

Meanwhile, place the sultanas and dates in a heatproof bowl. Cover with boiling water and stand for 10 minutes. Drain, reserving 2 tablespoons of the liquid

Place the oat mixture in a food processor with the Weetbix. Process until chopped finely. Remove ¾ cup of the mixture and set aside for coating.

Add the drained sultana mixture, cacao (or cocoa), coconut oil and syrup to the remaining oat mixture in the processor. Process until mixture is finely chopped and clings together, adding the reserved soaking liquid if the mixture is too dry.
