Melt butter in a skillet over medium heat. Add eggs, garlic powder, cayenne, salt, and pepper. Stir and cook until eggs are fully set.
Assemble Burritos
Lay each warmed tortilla flat. Add ½ cup scrambled eggs, ½ cup roasted potatoes, ¼ cup grated cheese, and ¼ cup of either bacon or sausage. Roll tightly into a burrito shape.
Finish and Serve
Cook burritos in a skillet with a small amount of butter or oil until golden on both sides, or bake at 350°F (175°C) for 10 minutes. Serve with salsa and sour cream.
